Mrs. Dalva Mendonça’s recipe for pão de queijo (Brazilian cheese rolls) became known far and wide, which led her and her son and daughter to open Forno de Minas in 1990.
The company grew quickly and soon exported to the United States, Europe and Asia. In 1999 Forno de Minas was sold to Pillsbury and in 2009 the Mendonça family resumed ownership, bringing back the famous recipe and producing original Brazilian cheese rolls in the company’s modern industrial park.
Forno de Minas’ plant has the capacity to produce 1,600 tons/month of ready-to-bake frozen Brazilian cheese rolls using a fully mechanized system with a production line designed and operated under the strictest standards of hygiene and quality control.
THE FORNO DE MINAS DAIRY
The cheese used in Forno de Minas products is made in their own dairy facility (Condessa Dairy Products), which has been supplying the largest Brazilian food companies since 1995. Their factory operates in accordance with the GMP (Good Manufacturing Practices) and HACCP (Hazard Analysis of Critical Control Point) systems, ensuring the standardization and quality of all our products. Condessa Dairy Products is certified by the International FIS (Federal Inspection Services) and the FDA (Food and Drug Administration), which permits them to export cheese to several countries, including the United States.
